Not every trip goes according to plan — and this one proved it. What started as a road trip from Cincinnati to the Blue Ridge Mountains turned into one of those beautifully chaotic adventures: a cozy cabin tucked into the woods of Vilas, the best biscuit I've ever eaten in Boone, a concert surprise that made my husband's whole year, and a car vandalism incident at a Charlotte airport hotel that we definitely didn't see coming.

The Drive

Cincinnati to Vilas, NC

We traded one Queen City for another, leaving Cincinnati behind for a weekend in Charlotte—with a much-needed mountain detour in between. We didn't hit the road until later than anticipated — my husband didn't get off work until around 6 PM, so we were driving 6 hours south through Kentucky and into the Blue Ridge Mountains of North Carolina almost entirely in the dark. We couldn't see where we were going most of the time, which was honestly a little scary — winding mountain roads with no streetlights and zero visibility.

But when we woke up the next morning and stepped outside? Completely worth it. The mountains were right there — lush, green, and quiet. The kind of views that make you forget how white-knuckled the drive was.

Our destination: a tiny handmade cabin in Vilas, North Carolina, just outside Boone. We booked it on Airbnb and honestly had no idea what to expect.

The cabin was tiny but incredibly well-built — exposed cedar, a ladder to the loft sleeping area, and a little kitchenette downstairs. It's not for everyone (you're climbing a ladder to bed and the space is compact), but for a one-night mountain stop, it was perfect. Quiet, surrounded by trees, and the kind of place where you actually put your phone down.

Day 2 Morning

The next morning we drove into Boone, a charming college town home to Appalachian State University. The mountains frame everything here — it's got that effortless mix of outdoorsy culture and small-town warmth.

We had one mission: Vicious Biscuit.

If you're anywhere near Boone, do not skip Vicious Biscuit. The biscuits are massive, flaky, and come loaded with everything from house-made sausage gravy to fried chicken with jalapeño cream. We ordered the benedicts — perfectly runny eggs over golden biscuits with hollandaise — and a fried chicken biscuit with gravy that was honestly life-changing.

Go early. Vicious Biscuit gets packed, especially on weekends. We walked in around 9:30 AM and the line was already building. Also — they have a Jam Bar with house-made jams you can sample. Don't skip it.

Day 2 Evening

The Charlotte Surprise

After Boone, we made a stop for country boots (because when in Appalachia, you commit to the vibe), then drove south to Charlotte for the real reason behind this whole trip.

I surprised my husband with tickets to see Zach Bryan.

I'll be honest — I don't listen to much country, so I was genuinely nervous about whether he'd even be a fan. But I knew my husband knows his music, and the second we pulled up to Bank of America Stadium and he realized what was happening, the look on his face told me everything. He was thrilled.

The energy in that stadium — thousands of people, the stage lit up at golden hour, the whole city skyline behind it — it was one of those moments that makes all the road trip planning worth it.

Concert Heads Up

If you're going to a concert at Bank of America Stadium (and possibly other Charlotte venues), they don't allow bags bigger than your phone. I did not know this going in and it was a real hiccup. There's a booth outside where you can buy a clear bag or store yours, but the line was long and it added stress we didn't need. Leave your bag at home (or in the hotel) or bring a tiny crossbody.

If you ever get the chance to see a show at this venue, do it. The open-air stadium with Charlotte's skyline as the backdrop is something else entirely.

One Last Stop: Pho Van

Before we hit the road back to Cincinnati, we made one more stop that turned out to be a highlight: Pho Van, a Vietnamese restaurant on South Boulevard in Charlotte. We ordered the Bun Bo Hue — a spicy, lemongrass-heavy beef noodle soup that's bolder and more complex than your standard pho. It was incredible.

The menu is huge with a lot of options, and they have a solid vegetarian section too, so it's great for groups with mixed diets. It's a no-frills spot — you're going for the food, not the ambiance — and the food absolutely delivers.

5615 South Blvd, Charlotte, NC 28217 — great for a pre-drive meal. Big portions, fast service, tons of variety. The Bun Bo Hue is a must if you like heat.

The Part We Didn't Plan

Here's the part of the trip I wish I didn't have to write about. We stayed at Charlotte's Holiday Inn Express near the airport — a standard, no-frills hotel for a quick overnight before heading home.

When we came out the next morning, our car had been vandalized.

It was jarring, frustrating, and honestly rattled us. The area around the Charlotte airport isn't one I'd recommend for overnight parking without extra precautions. We filed a report and dealt with it, but it put a real damper on what had been a great trip up to that point.

Heads Up

If you're staying near Charlotte Douglas Airport, choose a hotel with gated or covered parking and don't leave anything visible in your car. We learned this the hard way. A few extra dollars for secure parking is worth the peace of mind.

Even if you're just passing through, stop for a meal. Vicious Biscuit alone is worth the exit. The Appalachian State campus area is walkable and charming.

Charlotte Airport Hotels: Be Cautious

Not all airport hotels are created equal. Research parking security before booking, and consider staying in Uptown Charlotte or South End instead.
